This recipe was inspired by my son. He wanted meatball subs one weekend so I developed these delicious subs just using combinations of foods that I enjoy. Fresh basil, garlic, Italian bread crumbs and ooey gooey mozzarella. How could you possibly go wrong? I do take a few shortcuts with this recipe including jarred marinara. I’m a busy single mom with 2 teenagers at home so shortcuts like jarred marinara make life a bit easier. I use Barilla marinara since I find it to be more sweet and less bitter than others. These meatballs are so delicious that you could also use them to make spaghetti and meatballs or even enjoy them topped with the marinara and mozzarella with a piping hot slice of garlic bread.
Although the picture doesn’t show it, I like to cut these large meatballs in half so that they sit flat on the sub rolls and I can get just the right balance of meatball and marinara with each bite. Cutting the meatballs in half also makes the whole thing a bit easier to eat. Buon Appetito!
