I was cleaning the house this weekend and trying to get my kids to help out. Wait, is Mother’s Day this weekend? Why should we Moms ever think that a day all about us might inspire our children to pitch in out of the kindness of their hearts? Someday… *sigh.* Anyway I decided I needed to treat myself so I threw together one of our favorite snacks for lunch, chili nachos. Yum. This recipe was inspired by the best nachos I’ve ever had made by Ted’s Montana Grill. It’s hard to find really good hearty nachos eating out, but I really liked Ted’s. Their recipe uses Karen’s Flying D Bison Chili. Bison is delicious but expensive. I make my own chili with bacon, ground pork, and ground beef. It’s equally delicious!
Now let’s talk about tortilla chips for a second. I have yet to find a really good pre-packaged nacho that I can buy from the grocer. I have made my own by baking white corn tortillas and white flour tortillas. They turned out pretty ho hum and boy does it take forever to bake enough nachos for three of us! What a pain in the neck. If anyone has any tips on really good pre-packaged tortilla chips with a strong corn flavor, feel free to leave a comment. I would be thrilled to try something new.
With the diy tortilla chip experience still fresh in my mind I decided that this time I would use Tostitos White Corn Scoops. It’s pretty easy to open a bag 🙂 and the scoop shape makes it easier to eat the chili with all of its glorious toppings. Speaking of toppings, I love to top this with chilled diced vegetables and creamy sour cream. I’ve always been a big fan of cold and hot foods mixed together. For the vegetable toppings I use diced jalapenos (even though jalapenos are added to the chili), diced scallions (I love these on pretty much anything!), and yellow tomatoes (yes you heard me right they’re yellow). The yellow tomatoes are less acidic than a red tomato so my kids will actually eat them. Finally cheese and sour cream are the dairy cherries on top of this snacktastic concoction.
