Mmmm fajitas…just the thought of delicious seared flank steak marinated in chimichurri and lime smothered with sautéed white onions and red bell peppers makes my mouth water. This original recipe is another one of my kid’s favorites. I discovered chimichurri sauce at my local grocer many years ago. I bought a prepared skirt steak that was slathered with chimichurri. It looked so good I couldn’t resist. The flavor of that skirt steak combined with a carne asada that I had on a business trip in Washington DC with a group of friends are combined in this recipe. Food purists may balk at the fact that I don’t use fresh chimichurri, but I add a lot of fresh ingredients to the prepared chimichurri that I use. The fresh lime gives the flank steak a wonderful tangy flavor and helps tenderize the meat with an overnight marinade. I sauté the white onion and red bell pepper in the marinade and OMG! Soooo delicious.
I use Gaucho Ranch Argentinian chimichurri sauce. I buy it at Publix but here is a link on Amazon http://www.amazon.com/Gaucho-Ranch-Chimichurri-Original-Argentinean/dp/B003TQY05S. Obviously fresh is better and there are a lot of recipes out there so try a few options and find what you like. I hope you enjoy this recipe as much as my children do.
