Inspired by some of the healthy recipes occasionally featured at theberry.com, this recipe features avocado, bacon and quinoa … obviously. The recipe that inspired me to play with quinoa was a vegan recipe. I’m the furthest thing from a vegan so I mixed it up with yummy, salty, delicious bacon. Bacon makes everything better! The quinoa salad is dressed with an orange balsamic vinaigrette while red bell peppers, red onions, and feta join superfoods like spinach and pomegranate to create a healthy and satisfying dish.
The vinaigrette coats the vegetables and quinoa with a tartness that is balanced by the sweetness of the orange zest, bell pepper and pomegranate. The salty feta and bacon round out the tart, salty and sweet flavors. The hearty quinoa fills you up and provides plenty of protein.
Enjoyed with homemade nan and iced tea this makes a perfectly tasty one dish meal. Quinoa is one of those foods that you can mix with just about anything. Be adventurous and try your favorite herbs, vegetables, and dressing to create your own recipe!
